RAPS will highlight microencapsulated ingredients and functional savory fillings at iba this year, under the motto ‘Bake the world a little better’.
The RAPS Coatec process, for example, provides functional core materials with a protective layer, shielding them from external influences such as temperature, moisture and oxidation. The encapsulation of acids and carbonates is also crucial for high-quality baked goods and allows for controlled release of the ingredient, RAPS explains. The technology enables manufacturers to improve dough properties, and processability while extending the shelf life of tortillas, toast and other baked goods.
Another highlight on its stand will be savory fillings based on vegetables, herbs, meat, fish, or dairy products – including vegan. “Besides the so-called Fresh Line, manufacturers can use our seasonings and bindings for pies, strudels, or other snacks, which only need to be mixed with a base of cream cheese or quark. The RAPS Magic Bakery products can also be mixed with curd or cream cheese and used as a filling,” the company reveals. Dough solutions will also be highlighted, particularly The Magic Bakery range.
“We have improved our savory fillings, offering a variety of flavor options in ready-to-eat pastries. Furthermore, we have created a new concept for adding flavor and color to the dough by presenting our new liquid Magic Bakery products,” RAPS specialists underline.
Different applications will be on display. Pastries can be tasted at the stand, too, with classic traditional fillings (such as Tomatino Pepperito, Tzatziki and Bacon Onion) as well as exotic fillings (such as Korean BBQ and Kebab).
Further R&D
RAPS will continue to focus its efforts on taste and coated functionality to develop new products. “In particular, our expertise in the production of powdered and liquid products makes us a leading international expert in functional ingredients and individual flavor concepts. Our coating technologies support the delicate interaction of ingredients in the production process and beyond. In this way, we enable manufacturers to have full control over the baking production process and the shelf life of their products,” RAPS details.
