At iba, FRITSCH will present a new pastry line with a hygienic design that emphasizes good accessibility, quick cleaning, and easy handling, the company explains. The PROGRESSA pastry is a pastry line for retail bakers. The key design features initially introduced with the bread line are now available for pastry production.
The line architecture prioritizes smooth surfaces, watertight covers on threaded connections, and rounded corners to prevent dust from depositing. A linear quick-release mechanism for the belt, like on the feed table of the satellite head for example, ensures good accessibility even in tight spaces. Also, “On the so-called “omega drives”, the belt can be completely relaxed in a matter of seconds, which makes cleaning under belts a quick and easy process as well. A new folding plough concept and an easy-to-remove, substantially lighter wrapping roller makes for easy handling and fast line changeover,” FRITSCH says.
Because the line is designed for wet cleaning, it is automatically also suitable for producing meat-filled products.
In addition, FRITSCH will also highlight its ROLLFIX prime dough sheeter. Equipped with a new controller, the ROLLFIX is now quicker and more intuitive to operate, the company points out.
The new solutions can be seen in actions with four live demonstrations per day. Products will be baked in an open bakery throughout the entire duration of the fair.
Visitors can also see baked goods cooling inside a packaging machine with the “Cooling@Packing” solution from MULTIVAC. This is a vacuum application that integrates the cooling process for baked goods into a thermoforming packaging machine. This allows baked goods to be packed immediately after baking, keeping them fresh and edible for longer.
