An unusual organic bakery celebrates its anniversary this year: MOIN Bio Backwaren GmbH from Glückstadt on the Elbe is looking back on three decades of delicious moments, baking artistry, and a deep connection to life and nature.

MOIN works in a 4,500 sqm production facility in the city on the Elbe. What makes the bakery unique is that it offers a family-friendly, five-day week, without night shifts. Hans Paul Mattke, the company’s founder, did not want to subject himself and his employees to the night shifts that are common in bakeries. At the same time, he was aware of the difficulty many bakeries have in creating the right environment for the cool maturation of good croissant dough. The combination of these two ideas led him to the idea of MOIN – a production facility for frozen organic baked goods.

The organic bakery is celebrating its 30th anniversary under the motto ‘Honorable Harvest’. Jule Usadel, who manages MOIN together with Julianna Müller and Vicky Radtke, proudly states: “We supply thousands of people with our organic baked goods every day. We are very grateful to be able to help shape our wonderful world with this meaningful work.”

The celebrations began with a special get-together at the Millerntor Stadium of MOIN partner FC St. Pauli on June 11. Around 25 guests from the press, trade, and associations learned a lot about the history and future of MOIN organic baked goods. They could also have a taste of fresh Franzbrötchen, vegan croissants, and more.

As celebrations continue, MOIN is opening its doors at its Glückstadt location on September 20, 2025, from 11 a.m. to 6 p.m. and cordially invites friends and partners to join them for inspiring conversations, a tour of the production facility, entertainment and good food. The company will host a double celebration then, with its founder’s 70th birthday.
