Puratos returns to iba with three breakthrough developments: a novel bakery improver that supports convenience and sustainability, sprouted grains that boost fiber content and taste, and a reimagined brioche concept that is also environmentally friendly.
New improver: Cubease
Puratos will unveil Cubease, a highly concentrated bakery improver that supports improvements in convenience, efficiency, and sustainability. “Unlike traditional improver formats, Cubease delivers powerful functionality in a remarkably compact form – each lightweight cube is precisely dosed to treat 10kg of flour,” Puratos explains. This concept is meant to help eliminate the need for manual weighing and lifting heavy ingredient bags; in this way, it can streamline daily operations while improving accuracy. Its compact design also means it lowers storage needs by up to 75 % while generating 10 times less environmental impact through optimized packaging.
Cubease is a scalable solution that can be used both in artisanal and industrial baking operations.
Sprouting opportunities in grains
Sproutgrain Rye will also be introduced, an ingredient that brings unique taste, texture, and nutritional benefits to new bread concepts. “Made from whole rye grains grown in the ideal Nordic climate, the new ingredient delivers a distinctive flavor profile with rich toasted notes, malted undertones, and a touch of sweetness,” Puratos explains.
Supplied ready to use, Sproutgrain Rye has a moist format, which preserves the texture and freshness, since it does not need to draw moisture from the baked goods.

Brioche, reinvented
Puratos will also present a reimagined approach to brioche that addresses environmental impact and rising production costs. The company’s new concept can reduce carbon footprint by up to 40 % and enables cost savings of up to 25 %, with no impact on the characteristics of a traditional brioche.
At the iba stand, visitors will be able to explore an interactive tool that maps each component’s sustainability impact, offering insight into how targeted changes can drive concrete improvements for the planet and profitability.
