Iba is preparing to showcase the latest food trends in the baking industry, with a new feature introduced this year: the iba.FOOD TRENDS AREA. Here, exhibitors will present the latest trends from innovative raw materials and baking ingredients to snack ideas and healthy ingredients.

iba exhibitors will demonstrate how artisan bakery and the art of confectionery are constantly evolving, combining tradition with innovation. Innovative food trends are one of the focus topics visitors can expect, staged in Hall 15.

Conscious, mindful eating encompasses gluten-free and vegan alternatives as well as high-fiber ingredients. New flavors from all over the world will also be highlighted. Protein-rich food ingredients and more sustainable ingredients are another current important, with a focus on reducing sugar and fat content. Local authenticity will also be reflected at the stands.

The iba.FOOD TRENDS AREA is set up like a boulevard through Hall 15, where exhibitors will present their solutions and expertise on individual ‘island stands’. Dutch specialist Zeelandia, for example, which is celebrating its 125th anniversary, is one of the exhibitors in this area. Its stand will highlight bread, fillings for baked goods, baking ingredients and application solutions, with a focus on the freshness concept. IREKS will illustrate three major themes: plant-based nutrition as an enrichment of food culture; ‘Food Moments’, which turns baked goods into an experience; and ‘Tastes of the World’ -producing the diversity of world flavors locally. Loryma will showcase wheat starches, protein and starch-based food ingredients. Also in this area, Kerry will focus on sustainable and healthy food and ingredients. Lessaffre is taking visitors on an immersive ‘Future Experience’ based on trend analysis. Visitors to the trade fair can discover three future scenarios and experience them through interactive tastings and demonstrations.

Visitors looking for solutions in healthy snack alternatives, egg substitutes made from soya, or creative solutions for crispiness, trend studies and innovative food ingredients will find them in Hall 15, the organizers detail. Exhibitors with food trend concepts include Puratos, Dawn Foods, Food Colours, Kandy or Interstarch, Pavoni Italia and Soy Austria, as well as Eurogerm and Fine Organics. The exhibitors from the Food Trends area can be found online via the iba platform.

Presentations on the iba.STAGE in Hall 15 will also bring insights into new trends. ‘Exhibitor Sum Ups’ will be presented here daily, starting from 11 AM.
