Artisan bakery is among the top priorities at iba, a focus that will be reflected in several events and show features this year. For example, visitors can learn the art of baking pretzels and obtain a certificate. This class is held at the iba.ACADEMY in Hall 14. In addition, guided bakery tours in and around Düsseldorf will be organized, for an image of local businesses. To join the tours, visitors must register in advance, online.
The iba.FORUM in Hall 14 is also all about artisan bakery. Here, the Honorary Prize of the German Bakery Trade will be awarded to around 50 outstanding artisan bakeries, on May 18. The ‘iba.UIBC Cup of Bakers’ will start on the same day. The ‘World Championship of Bread Sommeliers’ will take place on May 21.
Sustainable solutions for artisan bakers are also highlighted, from renewable materials for shop concepts, such as reed, wood, bamboo or cotton, to hybrid concepts for after-hours sales via automated systems.
A new design competition, ‘Bakery of the future’, is also underway, on the topic of shop fitting. Participants can submit their ideas online until March 21. The best concepts will be awarded on May 20 at the iba.FORUM.
Oven builds
With a focus on energy efficiency, oven manufacturers will demonstrate how residual heat can be used using heat recovery systems, which also brings additional benefits, including shorter baking times, better dough development and crust formation. In-store baking ovens will also be showcased in Hall 13.
Snack and coffee concepts will also have a dedicated space.
“We are committed to the strong future of the baking industry in Germany“, says Roland Ermer, President of the German Baker’s Confederation, which provides information about career opportunities in the bakery sector, develops numerous support programs for training companies and promotes talents through championships. At iba, the German Baker’s Confederation organizes the Azubi Werkstatt (Trainee Workshop) for four days, where young people can gain insights into artisan bakery.
Held in Düsseldorf from May 18 – 22, 2025, iba will showcase the diversity of the baking industry on a space spanning more than 98,000 square meters. Artisan bakery is one of the top focus topics, with 19,000 square meters for dedicated topics in halls 13 and 14.
