Swiss companies Cetravac AG and bakeXperts entered an agreement to be exclusively represented on the Polish market, starting this year by the trading and service company Giko from Tarnowskie Góry. Gikois  specializes in technology for the baking industry. Adolf Cermak, founder of Cetravac AG and bakeXperts, and Giko’s owner, Andrzej Giolbas, signed a sales and service contract in mid-December.

Cetravac AG specializes in the field of vacuum conditioning and is an established market player both in Germany and internationally. Vacuum cooling technology brings numerous benefits to partially baked goods, which have a longer shelf-life, are safe from the development of microorganisms and spores, and retain their shape and volume, with considerably delayed retrogradation. This technique helps save electricity and gas. Moreover, Cetravac invented the ‘Ready to Eat’ process for the baking and cooling of baked goods that also contributes to saving costs, while also supporting product quality improvements, the company explains. Cetravac stores a process control in its systems that is precisely tailored to the company, its products and their requirements.

Also founded by Adolf Cermak, bakeXperts is known for the Univac double oven UDO, which also employs vacuum technology to shorten baking times and improve product quality. The UDO uses vacuum for baking and for cooling down to serving temperature. The UDO can be used for frozen green dough pieces as well as for pre-cooked, half-baked goods, regardless of whether they were stored frozen or at ambient temperature.

Company founder Adolf Cermak sees the market entry in Poland as a logical next step in sales, which have so far been focusing on Scandinavia, Western Europe and the UK. Cermak: “The Polish market, with the duality of trade and industry, is similar in structure to the markets in Germany, Austria and Switzerland. Both market segments can save time and energy with both vacuum technologies, tailored to their processes, while also minimizing production losses.”
