Koenig launches new dough sheeting line

The Koenig Group introduced a new technology solution, the Artisan SFE EC dough sheeting line, which brings improvements in process efficiency, cleanability and user-friendliness. The machine will be presented at suedback, in Stuttgart later this month, along with its latest solutions and daily live demonstrations.

Koenig explains the line’s workflow: “Production occurs without an edge section, which means that there is no remaining dough. Thanks to the sustainable, technical operation of the unit, the Artisan SFE EC can consequently be used for production that really conserves resources. Thanks to a wide range of stamping tools and integrated inline seeding, the line is perfectly suited to grain rolls.”

It is a compact line dough sheeting line that offers several advantages, processing doughs with a dough yield of 155 to 175 – from grain roll doughs to soft doughs. Product diversity is achieved by exchanging its cutting and stamping tools. For more product diversity, a cup rounding station can also be integrated into the new sheeting line.

The ‘E’ in its name stands for efficiency in bread roll production via endless dough sheet generation, which is supported by an ergonomic design. The ‘EC’ is the abbreviation for Koenig’s Easy Clean design.

“The main focus during the development of the system was clear: technology that supports the commercial baker in his daily bread roll production,” Koenig explains in the launch announcement.
