The 38th AIBI Congress brought the baking industry together this year for the moment’s most important topics, decision-making meetings and long-awaited reunions. The International Association of Plant Bakers organized this year’s event with the theme ‘21st Century Breeze over the Bakery’, and a picturesque location to match it: the city of Hamburg.

The UDO can bake frozen, ambient-stored raw dough, or parbaked products such as rolls, baguettes and even larger loaves and cool them to perfect-to-eat level in less than 5-10 minutes. It does so while achieving perfectly even heating and retaining all product characteristics, consistently.
To optimize in-store baking efficiency, the UDO baking technology is one to watch. It stands for Univac Double-bake Oven and is powered by Cetravac AG’s patented innovation. Developed under the bakeXperts brand, the UDO opens the door to a new world of baking in-store.
Middleby Europe announced the opening of a new Innovation Kitchen in Madrid, Spain. The European team worked for one year on the development of this project.
Middleby Corporation partnered with Vyv to provide baking equipment that comes equipped with antimicrobial LED technology, a continuous hygiene solution based on UV-free, visible light that safely offers protection against bacteria, viruses, mold, fungi, yeasts and other microorganisms.
